This seaweed tsukudani is made by carefully cooking domestically produced seaweed from Lake Hamana and Ise with soy sauce, sugar, and mirin. It is neither too sweet nor too salty, and is a very elegant seaweed tsukudani that makes the most of the natural flavor of the seaweed.
