With the cooperation of the Hida Takayama Chinese Noodles Preservation Society, we have recreated the Hida Takayama Chinese Noodles, one of the most historic and well-known noodles in the Chubu region, with Sugomen. The soup is made with chicken and pork carcasses, and has a Japanese-style soy sauce flavor with the addition of dried sardines and bonito flakes.
